4 cups green cabbage, finely shredded

2 cups red cabbage, finely shredded

1 cup carrots, julienned

1 cup bell peppers (red or yellow), thinly sliced

1/2 cup scallions (green onions), chopped

1 cup sugar snap peas, trimmed and halved

1/2 cup fresh cilantro, chopped

1/2 cup roasted unsalted peanuts, roughly chopped

For the Dressing:

1/4 cup soy sauce (or tamari for gluten-free)

2 tablespoons rice vinegar

2 tablespoons sesame oil

1 tablespoon honey (or maple syrup for vegan)

1 teaspoon freshly grated ginger

1 garlic clove, minced

1 tablespoon lime juice

Optional: 1 teaspoon chili flakes for heat

Instructions
 

Prepare the Vegetables: In a large mixing bowl, combine the shredded green cabbage, red cabbage, julienned carrots, sliced bell peppers, chopped scallions, and halved sugar snap peas. Toss well to blend.

    Make the Dressing: In a separate bowl or a small jar with a lid, combine the soy sauce, rice vinegar, sesame oil, honey, grated ginger, minced garlic, lime juice, and optional chili flakes. Whisk or shake well until fully combined.
