Ingredients

4 large whole wheat pita bread

1/4 cup olive oil

1/4 cup granulated sugar

1 tablespoon ground cinnamon

1/2 teaspoon sea salt

Optional: 1 teaspoon vanilla extract or a pinch of nutmeg for extra flavor

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Pita: Cut each pita bread into 8 triangles. You can do this by cutting them in half and then cutting each half into quarters.

Make the Cinnamon Sugar Mix: In a small bowl, mix granulated sugar, ground cinnamon, and sea salt together until well combined. If you’re using nutmeg or vanilla extract, you can add it to the olive oil in the next step.

Brush with Olive Oil: In another bowl, combine the olive oil with the optional vanilla extract. Brush both sides of each pita triangle with the olive oil mixture.

Coat with Cinnamon Sugar: Once all pita triangles are brushed with olive oil, sprinkle the cinnamon sugar mixture generously over both sides of the triangles.

Arrange for Baking: Place the coated pita triangles in a single layer on a baking sheet lined with parchment paper. Avoid overcrowding the tray for even baking.

Bake: Bake in the preheated oven for about 10-12 minutes or until the chips are golden brown and crispy. Keep an eye on them, as they can burn quickly!

Cool and Store: Let the chips cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. They will continue to crisp up as they cool. Store in an airtight container for up to a week.
