Crunchy Jalapeño Popper Wraps

4 large flour tortillas

8 oz cream cheese, softened

1 cup shredded sharp cheddar cheese

1/2 cup crumbled cooked bacon (about 4 slices)

1/4 cup pickled jalapeños, chopped (adjust to taste)

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/2 teaspoon smoked paprika

1 cup panko breadcrumbs

2 large eggs, beaten

Vegetable oil, for frying

Fresh cilantro, for garnish (optional)

Instructions
 

Prepare the Filling: In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, crumbled bacon, chopped pickled jalapeños, garlic powder, onion powder, and smoked paprika. Mix until all ingredients are well-integrated and set aside.

    Assemble the Wraps: Lay a tortilla flat on a clean surface. Spread about a quarter of the jalapeño popper filling evenly in a line down the center of the tortilla. Fold in the edges and roll the tortilla tightly from one end to the other to create a wrap. Repeat with the remaining tortillas and filling.

      Coat the Wraps: Set up a breading station. Place the panko breadcrumbs in a shallow dish. In another shallow dish, pour the beaten eggs. Dredge each wrap in the egg, making sure it’s fully coated, then roll it in the panko breadcrumbs until completely covered. This will give it that crispy exterior when fried.

        Fry the Wraps: In a large skillet, heat about 1/2 inch of vegetable oil over medium heat until hot. Carefully place the coated wraps into the oil, seam side down, and fry them in batches (do not overcrowd the pan) for about 3-4 minutes per side or until they are golden brown and crispy. Use tongs to turn the wraps to ensure even cooking.

          Drain and Cool: Once crispy and golden, remove the wraps from the skillet and place them on a plate lined with paper towels to drain excess oil.

            Serve: Slice the crispy jalapeño popper wraps diagonally and arrange them on a serving platter. Garnish with fresh cilantro if desired. Serve warm with a side of ranch dressing or your favorite dipping sauce.
