Ingredients

2 cups puffed rice cereal

1 cup crunchy peanut butter

1/2 cup honey or maple syrup

1/4 cup coconut oil (melted)

1/2 cup almond slivers (or any nuts of choice)

1/3 cup mini chocolate chips (dark or milk)

1/4 tsp salt

1/2 tsp vanilla extract

Instructions

Prepare the Pan: Line an 8-inch square baking dish with parchment paper, allowing some overhang for easy removal later. Set aside.

Combine Wet Ingredients: In a medium saucepan over low heat, combine the crunchy peanut butter, honey (or maple syrup), and melted coconut oil. Stir continuously until the mixture is smooth and well combined. Remove from heat and mix in the vanilla extract and salt.

Add Dry Ingredients: In a large mixing bowl, add the puffed rice cereal and almond slivers. Pour the warm peanut butter mixture over the dry ingredients and mix thoroughly until all the rice cereal and nuts are well coated.

Mix in Chocolate Chips: After the mixture has cooled slightly (to avoid melting the chocolate), gently fold in the mini chocolate chips until evenly distributed.

Transfer to Baking Dish: Pour the mixture into the prepared baking dish. With a spatula or your hands, press it down firmly and evenly, making sure to pack it tightly.

Chill: Refrigerate the bars for at least 1 hour, or until fully set. This will help them hold their shape when cut.

Cut and Serve: Once set, lift the bars out of the dish using the parchment overhang. Place on a cutting board and slice into squares or rectangles, depending on your preference.

Store: Keep any leftovers in an airtight container at room temperature for up to a week, or refrigerate for longer freshness.
