2 lbs Yukon Gold potatoes, peeled and cut into 1-inch cubes

2 tablespoons unsalted butter

1 tablespoon olive oil

1 large onion, finely chopped

2 cloves garlic, minced

1 cup heavy cream

1 cup shredded Gruyère cheese

1 cup shredded sharp cheddar cheese

1 teaspoon paprika

Salt and pepper, to taste

Fresh chives, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Boil the Potatoes: Place the cubed potatoes in a large pot of salted water. Bring it to a boil over medium-high heat and cook for about 8-10 minutes, or until the potatoes are just tender but not falling apart. Drain and set aside.

      Sauté the Aromatics: In a large skillet, melt the butter and olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until softened. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

        Combine Cream & Cheese: In a mixing bowl, whisk together the heavy cream, paprika, salt, and pepper. Slowly add the Gruyère and cheddar cheeses, mixing until well combined and you have a smooth cheese sauce.

          Combine Ingredients: In the skillet with the sautéed onions and garlic, add the boiled potatoes. Gently fold in the cheese mixture, ensuring all the potatoes are well coated.

            Bake: Transfer the potato mixture into a greased 9x13 inch baking dish. Spread it out evenly and sprinkle a little extra cheese on top if desired.

              Oven Time: Bake in the preheated oven for about 25-30 minutes or until the top is golden brown and bubbling.

                Garnish & Serve: Remove from the oven and let it rest for a few minutes. Garnish with freshly chopped chives before serving.
