1 cup uncooked jasmine rice

2 cups vegetable broth

1 cup fresh green beans, trimmed and cut into 1-inch pieces

1/2 cup dill pickles, chopped

1/4 cup fresh dill, finely chopped

1/4 cup red onion, thinly sliced

1 tablespoon olive oil

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

Salt and black pepper to taste

Optional: Crumbled feta cheese for garnish

Optional: Sliced radishes for added crunch

Instructions
 

Cook the Rice: In a medium saucepan, bring the vegetable broth to a boil. Stir in the jasmine rice, reduce heat to low, cover, and simmer for about 15 minutes, or until the rice is tender and the liquid is absorbed. Fluff the rice with a fork and set aside.

    Prepare the Dilly Beans: In a separate pot, bring water to a boil and add the green beans. Blanch them for about 3-4 minutes until they are bright green and crisp-tender. Drain and immerse them in ice water to stop the cooking process. Drain again and set aside.

      Make the Dressing: In a small bowl, whisk together the olive oil, apple cider vinegar, garlic powder, salt, and black pepper. Adjust seasoning to taste.

        Combine Ingredients: In a large mixing bowl, combine the cooked rice, blanched green beans, chopped dill pickles, fresh dill, and red onion. Pour the dressing over the mixture and toss everything until well combined.
