2 cups fresh or frozen pineapple chunks

1 cup coconut milk (full fat for creaminess)

1/2 cup sugar (or sweetener of choice)

1 tablespoon lime juice (freshly squeezed for best flavor)

1/2 teaspoon vanilla extract (optional for added flavor)

Prepare the Pineapple: If using fresh pineapple, peel, core, and chop it into chunks. If frozen, simply measure out 2 cups and allow it to sit at room temperature for about 5 minutes to soften slightly for blending.

    Blend Ingredients: In a high-speed blender, combine the pineapple chunks, coconut milk, sugar, lime juice, vanilla extract (if using), and a pinch of salt. Blend on high until the mixture is completely smooth and creamy. If the mixture is too thick, you can add a bit more coconut milk until you reach your desired consistency.

      Taste and Adjust: Taste the mixture and adjust sweetness or acidity if desired by adding more sugar or lime juice. Blend again briefly to mix.

        Chill the Mixture: Pour the blended mixture into a bowl or airtight container and place it in the freezer for about 30 minutes to firm up a bit, stirring every 10 minutes to break up the ice crystals.
