Easter Breakfast Casserole

8 large eggs

2 cups whole milk

1 teaspoon Dijon mustard

1 teaspoon salt

1/2 teaspoon black pepper

1 cup diced cooked ham

1 cup shredded cheddar cheese

1 cup fresh spinach, chopped

1/2 cup diced bell peppers (red and green for color)

1 cup cubed day-old bread (preferably brioche or sourdough)

Fresh parsley for garnish (optional)

Instructions
 

Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish with butter or cooking spray.

    Prepare the egg mixture: In a large mixing bowl, whisk together the eggs, whole milk, Dijon mustard, salt, and black pepper until well combined and slightly frothy.

      Layer the ingredients: Spread the cubed bread evenly in the prepared baking dish. Layer on the diced ham, chopped spinach, diced bell peppers, and shredded cheddar cheese.

        Pour the egg mixture: Carefully pour the egg mixture over the layers, ensuring that all bread is soaked. Gently press down with a spatula to aid absorption.

          Rest the casserole: Allow the casserole to sit for at least 15 minutes, enabling the bread to absorb the egg mixture fully. This step can be extended up to 2 hours in the refrigerator for a richer flavor.

            Bake the casserole: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and continue baking for an additional 15 to 20 minutes, or until the top is golden brown and the eggs have set.

              Garnish and serve: Once baked, let the casserole cool for 5 minutes. Garnish with fresh parsley if desired, then cut into squares and serve warm.
