Easy Chicken Quesadillas with Homemade Salsa

For the Chicken Quesadillas:

2 cups cooked chicken, shredded or diced (rotisserie chicken works great!)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

4 large flour tortillas

1 tablespoon olive oil

1 teaspoon taco seasoning (optional)

Salt and pepper to taste

1 small bell pepper, finely chopped (optional)

1 small onion, finely chopped (optional)

For the Homemade Salsa:

2 large ripe tomatoes, diced

1/2 small red onion, finely chopped

1 clove garlic, minced

1 small jalapeño, seeded and diced (optional for heat)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

Instructions
 

Prepare the Salsa:

    - In a medium bowl, combine the diced tomatoes, red onion, minced garlic, jalapeño (if using), and cilantro.

      - Squeeze the lime juice over the mixture and season with salt to taste.

        - Mix well and let it sit for at least 15 minutes to allow the flavors to meld.

          Cook the Chicken Filling:

            - In a large skillet over medium heat, add olive oil. Once hot, add the chopped onion and bell pepper (if using). Sauté until softened, about 3-4 minutes.

              - Add the shredded chicken, taco seasoning (if using), salt, and pepper, mixing well. Cook for another 2-3 minutes until heated through.

                Assemble the Quesadillas:

                  - Place one flour tortilla in a separate skillet or griddle over medium heat.

                    - On one half of the tortilla, sprinkle a layer of cheddar and Monterey Jack cheese. Next, add a portion of the chicken mixture on top and sprinkle with more cheese.

                      - Fold the tortilla in half, covering the filling, and press gently to seal.

                        Cook the Quesadillas:

                          - Cook the quesadilla for 3-4 minutes on one side until crispy and golden brown. Carefully flip and cook on the other side for another 3-4 minutes, or until the cheese is melted.

                            - Remove from the skillet and cut into wedges. Repeat with the remaining tortillas and filling.

                              Serve:

                                - Serve the quesadillas warm with the homemade salsa on the side for dipping. Enjoy your quick and cheesy delight!
