Easy Pork Fried Rice

2 cups cooked jasmine rice (preferably day-old)

1 cup pork tenderloin, finely cubed

2 tablespoons soy sauce

1 tablespoon oyster sauce

2 tablespoons vegetable oil

1 small onion, finely chopped

2 cloves garlic, minced

1 cup mixed vegetables (peas, carrots, and corn)

2 large eggs, beaten

3 green onions, chopped

Salt and pepper to taste

Optional: sesame oil for drizzling

Prepare the Ingredients: If using fresh rice, cook jasmine rice as per package instructions. For best results, use rice that has been cooked and refrigerated overnight. Chop the pork, onion, garlic, and green onions. Set aside your mixed vegetables, and beat the two eggs in a bowl.

    Cook the Pork: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the cubed pork and cook until browned and cooked through, about 5-7 minutes. Remove the pork from the skillet and set aside.

      Sauté Aromatics: In the same skillet, add the remaining tablespoon of oil and sauté the chopped onion and minced garlic until fragrant and the onion is translucent, about 2-3 minutes.

        Add Vegetables: Toss in the mixed vegetables and continue to stir-fry for another 2-3 minutes until they are tender and heated through.

          Scramble Eggs: Push the vegetable mixture to one side of the skillet. Pour the beaten eggs into the other side and scramble them until fully cooked. Combine them with the vegetables.

            Stir in Rice and Sauce: Add the cooked rice to the skillet, breaking up any clumps. Pour in the soy sauce and oyster sauce, stirring everything together. Add the cooked pork back into the skillet.

              Mix and Season: Stir-fry everything together, allowing the rice to fry slightly, about 3-5 minutes. Season with salt and pepper to taste. If desired, drizzle a small amount of sesame oil for extra flavor.
