4 medium-sized potatoes, peeled and cut into long strips

1 cup shredded cheddar cheese

1/2 cup all-purpose flour

1 cup breadcrumbs (preferably panko for extra crunch)

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

Oil for frying (vegetable or canola oil)

Prepare the Potatoes: Start by peeling the potatoes and cutting them into long strips or fingers. Rinse them under cold water to remove excess starch then pat dry with a paper towel.

    Parboil the Potatoes: In a large pot, bring water to a boil. Add the potato strips and parboil for 5-7 minutes until just tender but not fully cooked. Drain and let them cool completely.

      Set Up Breading Station: Prepare three shallow dishes. In the first dish, place the flour mixed with garlic powder, onion powder, paprika, salt, and pepper. In the second dish, whisk the eggs until smooth. In the third dish, add the breadcrumbs.

        Coat the Potatoes: Take a potato finger, dip it into the flour mixture first to coat, then immerse it in the eggs, and finally roll it in the breadcrumbs, pressing gently for an even coat. Repeat with all potato pieces.
