For the Shrimp:

1 pound shrimp, peeled and deveined

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

Salt and pepper to taste

Juice of 1 lime

For the Guacamole:

2 ripe avocados

1 small onion, finely chopped

1 tomato, diced

1 jalapeño, seeded and minced (optional)

Juice of 1 lime

Salt to taste

Fresh cilantro, chopped (optional)

For the Tostadas:

8 corn tostada shells

1 cup shredded lettuce

½ cup crumbled queso fresco or feta cheese

Extra lime wedges for garnish

Instructions
 

Cook the Shrimp:

    - In a medium bowl, toss the shrimp with olive oil, minced garlic, smoked paprika, salt, pepper, and lime juice. Let it marinate for about 10 minutes.

      - Heat a non-stick skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes on each side, or until opaque and cooked through. Remove from heat and set aside.

        Make the Guacamole:

          - Cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Mash the avocados with a fork until creamy but still slightly chunky.

            - Stir in the chopped onion, diced tomato, and jalapeño (if using). Add lime juice and salt to taste. Mix in fresh cilantro if desired. Set aside.

              Assemble the Tostadas:

                - Spread a generous layer of guacamole over each tostada shell.

                  - Top with a layer of shredded lettuce, followed by the cooked shrimp.

                    - Sprinkle with crumbled queso fresco or feta cheese.

                      Serve:

                        - Garnish with extra lime wedges on the side. Serve immediately and enjoy this vibrant and delicious plate!
