Ingredients

2 medium zucchinis, spiralized into noodles

1 cup bell peppers, thinly sliced (mix of red, yellow, and green)

1 cup snap peas, trimmed

1 cup carrots, julienned

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

3 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

1 tablespoon vegetable oil

1 teaspoon red pepper flakes (optional for heat)

2 green onions, sliced (for garnish)

1 tablespoon sesame seeds (for garnishing)

Instructions

Prep the vegetables: Begin by spiralizing the zucchinis into noodles. Thinly slice the bell peppers and julienne the carrots. Trim the snap peas and set all veggies aside.

Heat the oils: In a large wok or non-stick skillet, heat the vegetable oil and sesame oil over medium-high heat.

Sauté aromatics: Add the minced garlic and grated ginger to the heated oils. Stir-fry for about 30 seconds until fragrant but not burnt.

Add veggies: Toss in the sliced bell peppers, snap peas, and julienned carrots. Stir-fry for about 4-5 minutes until the vegetables are tender but still crisp.

Incorporate zucchini noodles: Gently add the zucchini noodles to the skillet. Pour the soy sauce over the mixture and add the red pepper flakes if you want some heat. Toss everything together for an additional 2-3 minutes, ensuring the zucchini noodles are well-coated and heated through.

Plate and garnish: Remove from heat and transfer the stir-fry to a serving plate. Sprinkle sliced green onions and sesame seeds on top as a fresh garnish.

Serve immediately: Enjoy your vibrant and healthy zesty zucchini noodle stir-fry warm!
