Egg Muffins with Spinach and Tomato

6 large eggs

1 cup fresh spinach, chopped

1 cup cherry tomatoes, halved

1/2 cup shredded cheddar cheese

1/4 cup milk (or non-dairy alternative)

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper, to taste

Cooking spray or olive oil for greasing the muffin pan

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Muffin Pan: Grease a standard 12-cup muffin tin with cooking spray or a little olive oil to prevent sticking.

      Mix the Ingredients: In a large mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until well combined.

        Add Veggies and Cheese: Gently fold in the chopped spinach, halved cherry tomatoes, and shredded cheddar cheese until evenly distributed.

          Fill the Muffin Cups: Pour the egg mixture into each muffin cup, filling them about 2/3 full to allow for rising.

            Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the egg muffins are set and lightly golden on top. A toothpick inserted into the center should come out clean.

              Cool and Serve: Remove from the oven and let the muffins cool in the pan for 5 minutes before gently loosening them with a knife and transferring them to a wire rack to cool completely. Enjoy warm or store in an airtight container in the fridge.
