Ingredients

1 lb chicken sausage (sliced)

12 oz penne pasta (or any pasta of choice)

1 can (14.5 oz) diced tomatoes (with juices)

1 can (15 oz) tomato sauce

1 medium onion (diced)

2 cloves garlic (minced)

1 bell pepper (any color, sliced)

1 cup chicken broth (low sodium)

1 cup heavy cream

2 tsp Italian seasoning

1/2 tsp red pepper flakes (optional, for heat)

Salt and pepper (to taste)

1 cup spinach (fresh)

1/2 cup grated Parmesan cheese (for serving)

Fresh basil leaves (for garnish)

Instructions

Prepare the Ingredients: Begin by slicing the chicken sausage into bite-sized pieces. Dice the onion and mince the garlic. Slice the bell pepper and set all ingredients aside.

Layer in the Crockpot: In a 6-quart crockpot, add the sliced chicken sausage first, followed by the diced tomatoes (with juice), tomato sauce, diced onion, minced garlic, and sliced bell pepper.

Add Liquids and Seasoning: Pour in the chicken broth and heavy cream, then sprinkle the Italian seasoning and red pepper flakes (if using) over the top. Stir everything gently to combine.

Cook the Pasta: Cover and cook on low for 4-5 hours, or on high for 2-3 hours, until the sausage is cooked through and the flavors meld together.

Cook the Pasta Separately: About 30 minutes before serving, cook the penne pasta separately according to package instructions until al dente. Drain and set aside.

Add Spinach & Combine: Once the crockpot cooking time is complete, add the fresh spinach into the crockpot. Stir until the spinach wilts. Then, gently fold in the cooked pasta.

Serve: Scoop the pasta into bowls, sprinkle with freshly grated Parmesan cheese, and garnish with basil leaves. Enjoy the warm, comforting flavors of autumn!
