Ingredients

2 lbs boneless, skinless chicken breasts

1 cup apple cider

1/2 cup barbecue sauce (your favorite brand)

1/4 cup honey

1 medium onion, finely chopped

2 cloves garlic, minced

1 tsp smoked paprika

1/2 tsp cinnamon

1/2 tsp salt

1/4 tsp black pepper

1/4 tsp cayenne pepper (optional, for heat)

4-6 whole grain or brioche burger buns

1 cup coleslaw (store-bought or homemade)

Fresh apple slices for garnish (optional)

Instructions

Prepare the Chicken: Place the boneless chicken breasts into the crockpot.

Mix the Sauce: In a medium-sized bowl, combine the apple cider, barbecue sauce, honey, chopped onion, minced garlic, smoked paprika, cinnamon, salt, black pepper, and cayenne pepper. Whisk until well blended.

Add the Sauce: Pour the sauce mixture over the chicken in the crockpot, ensuring the chicken is fully covered.

Cook: Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is fully cooked and tender.

Shred the Chicken: Once cooked, remove the chicken from the crockpot and shred it using two forks. Return the shredded chicken to the crockpot, mixing it with the remaining sauce.

Assemble the Sandwiches: Toast the burger buns lightly, if desired. Pile a generous portion of the pulled chicken onto the bottom half of each bun.

Top with Coleslaw: Add a scoop of coleslaw on top of the chicken for a crunchy texture.

Garnish and Serve: If you like, add fresh apple slices for extra flavor and crunch before placing the top half of the bun. Serve immediately and enjoy the warmth of fall in every bite!
