Fig Jam Sandwich Melt

8 slices of sourdough bread

1 cup fig jam

8 ounces goat cheese, softened

1 cup fresh arugula

4 ounces prosciutto, thinly sliced

2 tablespoons olive oil

Salt and freshly cracked black pepper, to taste

Optional: balsamic glaze for drizzling

Instructions
 

Prep the Bread: Heat a non-stick skillet or griddle over medium heat. Brush one side of each slice of sourdough with olive oil.

    Assemble the Sandwich: On the un-oiled side of four slices, spread a generous layer of fig jam, followed by a layer of goat cheese. Top with arugula and a few slices of prosciutto. Season with a little salt and freshly cracked black pepper.

      Close It Up: Place another slice of sourdough, oiled side up, on top of the filled slices, creating a sandwich.

        Cook the Sandwiches: Carefully place the sandwiches in the preheated skillet, cooking until golden brown and crispy, about 3-4 minutes. Flip and repeat on the other side, ensuring the cheese is nicely melted and the bread is toasted.

          Serve & Drizzle: Once the sandwiches are done, remove them from the skillet. If desired, drizzle with balsamic glaze for added flavor. Slice in half and serve immediately.
