Ingredients

1 lb ground chicken

1/2 cup breadcrumbs (preferably panko for extra crunch)

1/4 cup green onions, finely chopped

1/4 cup cilantro, chopped

2 garlic cloves, minced

1 egg, beaten

1 tbsp soy sauce

1 tsp ginger, grated

1/2 tsp red pepper flakes (adjust to your spice preference)

Salt and pepper to taste

1/4 cup sweet chili sauce

2 tbsp sriracha (add more for extra heat)

1 tbsp sesame oil

1 tbsp honey (optional, for added sweetness)

Optional garnish: sesame seeds and additional green onions

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Mix the Meatball Ingredients: In a large mixing bowl, combine the ground chicken, breadcrumbs, chopped green onions, cilantro, minced garlic, beaten egg, soy sauce, grated ginger, red pepper flakes, salt, and pepper. Mix everything until just combined, being careful not to overmix.

Form the Meatballs: Using your hands, form the mixture into meatballs, about 1-inch in diameter. Place the meatballs on the prepared baking sheet, leaving some space between each one.

Bake the Meatballs: Bake in the preheated oven for 20-25 minutes, or until they are golden brown and cooked through (an internal temperature of 165°F/75°C).

Prepare the Firecracker Sauce: While the meatballs are baking, combine the sweet chili sauce, sriracha, sesame oil, and honey (if using) in a small saucepan. Heat over medium-low heat, stirring until well blended and warmed through. Taste and adjust the spiciness according to your preference.

Coat the Meatballs: Once the meatballs are done, remove them from the oven and toss them gently in the firecracker sauce until fully coated.

Serve: Transfer the coated meatballs to a serving platter. Garnish with sesame seeds and chopped green onions if desired. Enjoy them hot as an appetizer or serve them over rice for a delightful main course.
