1 lb large raw shrimp, peeled and deveined

1/4 cup mayonnaise

2 tablespoons Sriracha (adjust for spice preference)

1 tablespoon lime juice

1 teaspoon honey

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon grated fresh ginger

Salt and pepper to taste

1 head butter lettuce or iceberg lettuce (for cups)

1/2 cup shredded carrots

1/4 cup chopped green onions

Sesame seeds for garnish

Fresh cilantro for garnish (optional)

Instructions
 

In a mixing bowl, combine the mayonnaise, Sriracha, lime juice, and honey. Stir until well combined and set aside as the sauce for the shrimp.

    In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.

      Add the shrimp to the skillet. Season with salt and pepper, and cook for about 2-3 minutes on each side, or until the shrimp are pink and opaque.

        Once the shrimp are cooked, remove them from the heat and transfer them to the mixing bowl with the sauce. Toss the shrimp until they are evenly coated in the spicy mayonnaise mixture.

          To assemble the lettuce cups, carefully separate the lettuce leaves. Place a generous spoonful of the firecracker shrimp on each leaf.
