8 oz (226g) high-quality bittersweet or semisweet chocolate, chopped

½ cup (113g) unsalted butter, cut into pieces

¾ cup (150g) granulated sugar

3 large eggs, at room temperature

1 tsp pure vanilla extract

¼ cup (30g) unsweetened cocoa powder, sifted

⅛ tsp salt

Optional garnish: powdered sugar, fresh berries, or whipped cream

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease an 8-inch round cake pan with butter or line the bottom with parchment paper for easy removal.

    Melt the Chocolate and Butter: In a medium saucepan over low heat, combine the chopped chocolate and butter. Stir continuously until fully melted and smooth. Remove from heat and allow to cool slightly.

      Add Sugar and Eggs: Once the chocolate mixture has cooled slightly (but is still warm), whisk in the granulated sugar until fully combined. Then, add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.

        Sift in Dry Ingredients: Sift the unsweetened cocoa powder and salt over the chocolate mixture. Gently fold with a spatula until just combined, being careful not to overmix.
