1 cup Arborio rice

4 large onions, thinly sliced

4 cups beef or vegetable broth

1 cup dry white wine (optional)

2 tablespoons unsalted butter

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon sugar

1 teaspoon dried thyme

Salt and pepper to taste

1 cup grated Gruyère cheese

Fresh parsley, chopped for garnish

Instructions
 

Caramelize the Onions: In a large pot, heat the olive oil and butter over medium heat. Add the sliced onions and sprinkle with sugar. Cook for about 30-40 minutes, stirring frequently, until the onions are deep golden brown and caramelized.

    Add Garlic and Herbs: Stir in the minced garlic and thyme and cook for an additional 1-2 minutes until fragrant.

      Deglaze the Pan: If using wine, pour it in to deglaze the pot, scraping up any browned bits from the bottom. Allow the wine to reduce for about 5 minutes.

        Cook the Rice: Add the Arborio rice to the pot and stir well to coat the grains. Toast the rice for about 2-3 minutes, stirring continuously.

          Add the Broth: Gradually add the beef or vegetable broth, one ladle at a time, stirring frequently. Wait until the liquid is mostly absorbed before adding the next ladle. This process will take approximately 18-20 minutes, or until the rice is al dente and creamy.

            Season: Remove from heat and season with salt and pepper to taste.

              Serve: Spoon the rice into bowls and top generously with the grated Gruyère cheese. If desired, place under a broiler for a minute or two to melt and brown the cheese slightly.

                Garnish: Sprinkle with fresh chopped parsley before serving.
