Ingredients

4 boneless, skinless chicken breasts

2 large onions, thinly sliced

3 cloves garlic, minced

2 tablespoons unsalted butter

1 tablespoon olive oil

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 cup beef broth

1 cup shredded Gruyère cheese (or Swiss cheese)

1/2 cup cream cheese, softened

Salt and pepper to taste

1 tablespoon balsamic vinegar (optional)

Fresh parsley for garnish (optional)

Instructions

Prepare the French Onion Filling: In a large skillet over medium heat, melt the butter and olive oil together. Add the sliced onions and cook them, stirring often, until they are caramelized and golden brown; this will take about 20-25 minutes. Add minced garlic and thyme, cooking for an additional 2 minutes. Pour in the beef broth and cook until the liquid mostly evaporates (about 5-7 minutes). Season with salt, pepper, and balsamic vinegar (if using). Remove from heat and let cool slightly.

Mix the Filling: In a mixing bowl, combine the caramelized onion mixture with the cream cheese and half of the Gruyère cheese. Mix until well incorporated. Set aside.

Prepare the Chicken: Preheat your oven to 375°F (190°C). Place the chicken breasts between two pieces of plastic wrap or parchment paper, and gently pound them to an even thickness (about 1/2 inch thick). Season both sides with salt and pepper.

Stuff the Chicken: Take a portion of the onion and cheese mixture and place it in the center of each chicken breast. Fold the sides of the chicken over the filling, then secure with toothpicks or kitchen twine to keep the filling inside.

Sear the Chicken: In the same skillet used for the onions, add a little more olive oil if necessary, and heat over medium-high. Carefully place the stuffed chicken breasts in the skillet and sear for about 3-4 minutes on each side, until golden brown.

Bake the Chicken: Transfer the seared chicken to a baking dish. Sprinkle the remaining Gruyère cheese over the top. Bake in the preheated oven for about 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

Garnish and Serve: Remove the toothpicks or twine from the chicken. Let it rest for a few minutes, then garnish with fresh parsley if desired. Serve with your choice of sides, perhaps a simple green salad or roasted vegetables.
