2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon cumin

1 teaspoon garlic powder

½ teaspoon chili powder

Salt and pepper to taste

4 large whole wheat tortillas

1 cup fresh spinach leaves

1 medium ripe avocado, sliced

1 cup cherry tomatoes, halved

½ red onion, thinly sliced

½ cup crumbled feta cheese

½ cup fresh cilantro, chopped

1 lime, juiced

½ cup Greek yogurt or sour cream (optional, for serving)

Instructions
 

Prepare the Chicken: In a medium bowl, mix the olive oil, smoked paprika, cumin, garlic powder, chili powder, salt, and pepper. Add the chicken breasts to the bowl, coating them evenly with the spice mixture. Let marinate for at least 15 minutes, or up to 2 hours in the refrigerator for deeper flavor.

    Cook the Chicken: Preheat a grill or grill pan over medium-high heat. Place the marinated chicken on the grill and cook for about 6-7 minutes on each side, or until the chicken is fully cooked (internal temperature should reach 165°F/75°C). Once cooked, remove from the grill and let it rest for 5 minutes before slicing it into strips.
