1 pound cheese tortellini (fresh or frozen)

1 cup fresh basil leaves

1/2 cup grated Parmesan cheese

1/3 cup pine nuts (or walnuts for a twist)

2 cloves garlic, minced

1/2 cup extra virgin olive oil

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 cup mozzarella balls (bocconcini)

1/4 cup black olives, sliced (optional)

Fresh basil leaves, for garnish

Instructions
 

Cook the Tortellini: In a large pot, bring salted water to a boil. Add the tortellini and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Make the Basil Pesto: In a food processor, combine the fresh basil leaves, grated Parmesan cheese, pine nuts, and minced garlic. Pulse until finely chopped. While the processor is running, slowly pour in the olive oil until well blended and smooth. Season with salt and pepper to taste.

      Combine Ingredients: In a large mixing bowl, add the cooked tortellini, cherry tomatoes, mozzarella balls, and black olives (if using).
