Fresh Tomato Basil Sandwiches

4 slices of rustic bread (sourdough or ciabatta works great)

2 large ripe tomatoes, sliced

1 cup fresh basil leaves, washed and dried

4 oz fresh mozzarella cheese, sliced

3 tablespoons extra-virgin olive oil

1 tablespoon balsamic vinegar

1 clove garlic, minced

Salt and pepper to taste

Optional: a pinch of red pepper flakes for a kick

Instructions
 

Prepare the Dressing: In a small bowl, whisk together the extra-virgin olive oil, balsamic vinegar, minced garlic, salt, pepper, and red pepper flakes (if using). Set aside to let the flavors meld.

    Toast the Bread: Preheat a skillet or grill pan over medium heat. Lightly brush each side of the bread slices with some of the prepared dressing. Toast the bread in the skillet until golden brown and crispy, about 2-3 minutes on each side. Remove from heat.

      Assemble the Sandwiches: On two slices of the toasted bread, layer the sliced tomatoes, fresh mozzarella, and basil leaves. Drizzle a little more of the dressing over the top for added flavor. Top with the remaining toasted bread slices.

        Press and Heat: If desired, return the sandwiches to the skillet. Press down lightly and grill for an additional 2 minutes on each side until the cheese begins to melt and the sandwich is heated through.
