Ingredients

2 ripe bananas

1 cup coconut yogurt (or regular yogurt)

1 cup coconut milk (canned for creaminess)

2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

1/4 cup shredded coconut (unsweetened)

Optional: A handful of chopped nuts or berries for added texture

Instructions

Prepare the Bananas: Peel the ripe bananas and place them in a blender. Blend until smooth and creamy.

Mix the Base: In the blender with the banana puree, add the coconut yogurt, coconut milk, honey or maple syrup, and vanilla extract. Blend again until all the ingredients are well combined and the mixture is smooth.

Add Texture: If using, fold in the shredded coconut and any chopped nuts or berries. Stir gently to distribute them evenly throughout the mixture.

Pour into Molds: Carefully pour the mixture into ice pop molds, filling them nearly to the top (leave a little space for expansion). If you don’t have molds, small paper cups work in a pinch – just insert popsicle sticks after a couple of hours of freezing when the mixture is slightly firm.

Freeze: Place the molds in the freezer and freeze for at least 4-6 hours or until fully set.

Serve: To remove the pops, run the molds under warm water for a few seconds to loosen, then gently pull on the sticks. Enjoy your refreshing treats!
