Frozen Raspberry Coconut Bites

2 cups fresh or frozen raspberries

1 cup coconut cream (chilled)

1/4 cup honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1 cup unsweetened shredded coconut

1/2 cup crushed almonds (or any preferred nuts)

Pinch of sea salt

Instructions
 

Prepare the Raspberry Puree: In a blender, add the raspberries, honey (or maple syrup), and a pinch of sea salt. Blend until smooth. Pour the mixture through a fine-mesh sieve into a bowl to remove the seeds, if desired. Set aside.

    Mix the Coconut Cream: In a separate mixing bowl, combine the chilled coconut cream, vanilla extract, and a tablespoon of honey or maple syrup (adjust to taste). Whisk until creamy and smooth.

      Assemble the Bites: Line a muffin tin or silicone mold with parchment paper or lightly grease with coconut oil. Spoon a small amount of the raspberry puree into each mold, just enough to coat the bottom.

        Add Coconut Layer: Next, add a dollop of the coconut cream mixture on top of the raspberry layer, filling the molds about halfway. Finally, spoon a little more raspberry puree on top of the coconut layer, creating a layering effect.

          Add Crunch: Sprinkle the crushed almonds and shredded coconut evenly on top of each mold, pressing them gently into the mixture.

            Freeze: Place the mold in the freezer for at least 4 hours, or until completely frozen solid.
