1 cup rolled oats

1 cup almond flour

1/4 cup coconut oil, melted

1/4 cup maple syrup

1/2 teaspoon cinnamon

1/4 teaspoon salt

2 cups plain Greek yogurt (or dairy-free yogurt)

1/2 cup honey or agave syrup

1 teaspoon vanilla extract

1 cup finely diced apples (peeled)

1 teaspoon lemon juice

1 teaspoon cinnamon

For the Topping:

1/4 cup chopped walnuts (optional)

1/4 cup granola (optional)

Instructions
 

Prepare the Crust:

    - Preheat your oven to 350°F (175°C).

      - In a mixing bowl, combine rolled oats, almond flour, melted coconut oil, maple syrup, cinnamon, and salt. Mix until well combined.

        - Line an 8x8 inch baking dish with parchment paper, letting the ends hang over the sides for easy removal. Press the crust mixture firmly into the bottom of the dish.

          - Bake in the preheated oven for 15–20 minutes or until the edges are golden. Remove and let cool completely.

            Make the Frozen Yogurt Filling:

              - In a large bowl, combine Greek yogurt, honey (or agave), vanilla extract, and lemon juice. Stir until smooth.

                - Gently fold in the diced apples and cinnamon until evenly distributed.

                  Assemble the Squares:

                    - Once the crust is completely cooled, pour the yogurt filling over the crust, smoothing the top with a spatula.

                      - If desired, sprinkle chopped walnuts and granola over the top for added crunch.

                        - Cover the dish with plastic wrap and freeze for at least 4 hours, or until solid.
