Ingredients

1 cup plain Greek yogurt

1 cup cream cheese, softened

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1 cup mixed berries (blueberries, raspberries, strawberries), chopped if large

1 cup graham cracker crumbs

1/4 cup unsweetened cocoa powder (optional, for a chocolate twist)

1/4 cup melted coconut oil or butter

Pinch of salt

Instructions

Prepare the Cheesecake Base: In a large mixing bowl, blend the Greek yogurt, softened cream cheese, honey (or maple syrup), vanilla extract, and a pinch of salt until smooth and creamy.

Incorporate the Berries: Gently fold in the mixed berries, being careful not to mash them too much. You want to keep some chunks for added texture in the bites.

Make the Crust: In a separate bowl, combine the graham cracker crumbs, cocoa powder (if using), and melted coconut oil (or butter). Mix until all the crumbs are well-coated and the mixture resembles wet sand.

Assemble the Bites: Line a mini muffin tin with paper liners or lightly grease it. Press a small amount of the graham cracker mixture into the bottom of each muffin cup to form a crust. Use your fingers or a small shot glass to press it down firmly.

Add the Filling: Spoon the cheesecake mixture on top of the crust in each muffin cup, filling them to the top.

Freeze: Place the muffin tin in the freezer for about 3-4 hours, or until completely frozen.

Serve: Once frozen, remove the bites from the muffin tin by gently pulling off the paper liners. Serve immediately for best texture or store in an airtight container in the freezer for up to 2 weeks.
