Ingredients

1 cup plain Greek yogurt

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

1 cup whole wheat flour

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/2 cup fresh or frozen blueberries

1/4 teaspoon cinnamon (optional)

Mini muffin liners

Instructions

Prepare the Muffin Tin:

Line a mini muffin tin with muffin liners. This will help with easy removal after freezing.

      Mix the Wet Ingredients:

In a medium mixing bowl, combine the plain Greek yogurt, honey (or maple syrup), and vanilla extract. Whisk together until the mixture is smooth and well-combined.

          Combine the Dry Ingredients:

In a separate bowl, mix the whole wheat flour, baking powder, baking soda, salt, and cinnamon (if using). Stir the dry ingredients together so they are evenly distributed.

              Mix Dry into Wet:

Gradually add the dry mixture to the wet mixture, folding gently until just combined. Be careful not to over-mix; a few lumps are okay.

                  Add Blueberries:

Gently fold in the blueberries, ensuring they are distributed evenly throughout the batter.

                      Fill the Muffin Liners:

Using a small spoon or cookie scoop, fill each mini muffin liner with batter, about 3/4 full. Leave a little space at the top as they will expand slightly when freezing.

                          Freeze the Muffin Bites:

Place the muffin tin in the freezer and allow the bites to set for at least 2-3 hours until they are frozen solid.

                              Store for Later:

Once frozen, carefully remove the muffin bites from the liners and place them in a freezer-safe container. They can be stored in the freezer for up to 3 months.

                                  Serve and Enjoy:

When you’re ready to serve, take out the desired amount of muffin bites and let them sit at room temperature for a few minutes before enjoying. Perfect for a healthy snack or dessert!
