2 cups of plain Greek yogurt

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

1 cup rolled oats

1/2 cup granola (your favorite flavor)

1/2 cup mixed nuts (almonds, walnuts, or pecans), roughly chopped

1/2 cup dried fruits (cranberries, raisins, bananas), chopped if large

1/4 cup chocolate chips (optional)

Pinch of salt

Instructions
 

Prepare the yogurt mixture: In a mixing bowl, combine the Greek yogurt, honey or maple syrup, vanilla extract, and a pinch of salt. Stir until the mixture is smooth and well combined.

    Mix in the dry ingredients: Add the rolled oats, granola, mixed nuts, dried fruits, and chocolate chips (if using) to the yogurt mixture. Gently fold everything together until all the dry ingredients are well coated with the yogurt.

      Shape the coins: Line a baking sheet with parchment paper. Using a spoon or a small ice cream scoop, drop dollops of the mixture onto the parchment paper, pressing each dollop into a round coin shape about 1/4 inch thick. Make sure there are some spaces between the coins as they will expand slightly.

        Freeze: Place the baking sheet in the freezer for at least 4 hours or until the yogurt coins are completely frozen.

          Store: Once frozen, carefully remove the coins from the parchment paper and transfer them to a zip-top bag or an airtight container. Store in the freezer for up to 2 months.

            Serve and enjoy: When ready to enjoy, simply take out a few coins from the freezer and let them sit for a couple of minutes to slightly soften, or dig right in for a refreshing treat!
