Frozen Yogurt Cinnamon Swirl Muffin Bites

For the Muffin Batter:

1 cup whole wheat flour

1/2 cup rolled oats

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup coconut sugar (or brown sugar)

1 large egg

1/2 cup unsweetened applesauce

1/4 cup almond milk (or any milk of your choice)

1 teaspoon vanilla extract

For the Cinnamon Swirl:

2 tablespoons melted coconut oil (or butter)

3 tablespoons coconut sugar (or brown sugar)

1 tablespoon ground cinnamon

For the Frozen Yogurt Filling:

1 cup Greek yogurt (plain or flavored)

1 tablespoon honey or maple syrup (optional for sweetness)

Instructions
 

Preheat and prepare:

    Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners or grease it lightly with cooking spray.

      Make the muffin batter:

        In a large mixing bowl, whisk together the whole wheat flour, rolled oats, baking powder, baking soda, salt, and coconut sugar until well combined. In another bowl, beat the egg then add the applesauce, almond milk, and vanilla extract. Mix until smooth before combining with the dry ingredients. Stir gently until just combined; do not overmix.

          Prepare the cinnamon swirl:

            In a small bowl, mix together the melted coconut oil, coconut sugar, and ground cinnamon until it forms a paste. Set aside.

              Fill the muffin tin:

                Spoon a small amount of muffin batter into each mini muffin cup (about 1/3 full). Add a small spoonful (about 1 teaspoon) of Greek yogurt on top of the batter, then drizzle 1/2 teaspoon of the cinnamon swirl mixture over the yogurt. Lastly, top with more muffin batter until the molds are filled about 3/4 of the way full.

                  Swirl the cinnamon:

                    Using a toothpick or a skewer, gently swirl the cinnamon mixture into the batter and yogurt without overmixing to create a marbled effect.

                      Bake:

                        Bake in the preheated oven for 12-15 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

                          Cool and freeze:

                            Once baked, remove the muffin bites from the oven and let them cool in the tin for about 5 minutes before transferring to a wire rack to cool completely. Once cool, place the muffin bites in an airtight container and freeze for about 2-3 hours or until they are completely firm.

                              Serve:

                                Enjoy your frozen yogurt cinnamon swirl muffin bites straight from the freezer or let them sit at room temperature for a few minutes for a softer texture.
