1 cup graham cracker crumbs

1/4 cup unsweetened shredded coconut

1/3 cup granulated sugar

1/2 cup unsalted butter, melted

1 cup plain Greek yogurt

1/2 cup coconut milk (canned or carton)

2/3 cup fresh lemon juice (about 3-4 lemons)

Zest of 2 lemons

1/2 cup honey or agave syrup

1 tsp vanilla extract

Pinch of salt

Extra shredded coconut for garnish (optional)

Prepare the Crust: In a mixing bowl, combine graham cracker crumbs, shredded coconut, and granulated sugar. Pour in the melted butter and mix until the crumbs are evenly coated and resemble wet sand.
