1 cup all-purpose flour

½ tsp baking soda

¼ tsp salt

½ cup unsalted butter, softened

½ cup brown sugar, packed

¼ cup granulated sugar

1 tsp vanilla extract

1 large egg

1 cup mini chocolate chips

1 cup Greek yogurt (preferably plain or vanilla flavored)

2 tbsp honey or maple syrup (for sweetening the yogurt)

½ tsp vanilla extract (for the yogurt)

¼ cup chopped nuts (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) and lining a mini muffin tin with paper liners or greasing it lightly.

    Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking soda, and salt. Set this mixture aside.

      Cream Butter and Sugars: In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar together until light and fluffy (about 2-3 minutes).

        Add Wet Ingredients: Beat in the vanilla extract and the egg until well combined.

          Combine Mixtures: Gradually add the dry ingredient mixture to the wet mixture, mixing until just combined. Be careful not to overmix! Gently fold in the mini chocolate chips (and chopped nuts, if using) until evenly distributed.

            Scoop Batter: Using a small cookie scoop or tablespoon, spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

              Bake: Place the muffin tin in the preheated oven and bake for 10-12 minutes, or until the muffin bites are just golden brown and a toothpick inserted in the center comes out clean.

                Cool: Once baked, remove the muffin bites from the oven and let them cool in the tin for about 5 minutes before transferring to a wire rack to cool completely.

                  Prepare Frozen Yogurt: In a bowl, combine the Greek yogurt with honey (or maple syrup) and ½ tsp vanilla extract. Stir well until fully incorporated.

                    Fill Muffins: Once the muffin bites have cooled, cut the tops off gently, scoop out a small amount of the center, and fill each muffin with a dollop of the sweetened Greek yogurt. Replace the tops of the muffins.

                      Freeze: Place the muffin bites in the freezer for at least 1 hour or until the yogurt filling is firm.
