Frozen Yogurt Granola Sandwich Rounds

2 cups plain Greek yogurt (full-fat or low-fat)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1/2 cup rolled oats

1/2 cup mixed nuts (almonds, walnuts, cashews), chopped

1/2 cup dried fruit (cranberries, raisins, or apricots), chopped

1/4 cup mini chocolate chips (optional)

Fresh fruit slices (banana, strawberries, or peaches) for layering

Pinch of salt

Instructions
 

Prepare the Yogurt Mixture: In a medium bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of salt. Stir until well blended and smooth.

    Mix the Granola: In a separate bowl, combine the rolled oats, chopped nuts, dried fruit, and mini chocolate chips (if using). Mix thoroughly until everything is combined.

      Create the Rounds: Line a baking sheet with parchment paper. Using a cookie scoop or a tablespoon, drop spoonfuls of the yogurt mixture onto the parchment paper, creating round shapes approximately 2-3 inches in diameter. Flatten slightly to create even rounds.

        Layer with Granola: Sprinkle a generous amount of the granola mixture on top of half of the yogurt rounds. Gently press the granola into the yogurt.

          Add Fresh Fruit: Place a slice of fresh fruit on top of each sandwich base (the yogurt rounds without granola), then carefully top with another yogurt round that has granola on it, forming a sandwich.

            Freeze: Place the baking sheet in the freezer and freeze the sandwiches for at least 4 hours, or until completely frozen.

              Serve: Once frozen, remove the sandwiches from the baking sheet. Enjoy them immediately or store them in an airtight container in the freezer for a refreshing treat anytime!
