Ingredients

2 ripe mangoes, peeled and diced

1 cup plain Greek yogurt

1/2 cup coconut milk

1/4 cup honey or maple syrup (adjust to taste)

1 teaspoon ground cardamom

1 teaspoon vanilla extract

A pinch of salt

1 tablespoon freshly squeezed lime juice

Fresh mint leaves for garnish (optional)

Silicone mold or ice cube tray

Instructions

Prepare the Mangoes: Start by peeling and dicing the ripe mangoes. Make sure they’re soft and sweet for better flavor. If using frozen mango, allow it to thaw slightly.

Blend Ingredients: In a blender, combine the diced mangoes, plain Greek yogurt, coconut milk, honey or maple syrup, ground cardamom, vanilla extract, a pinch of salt, and lime juice. Blend until you achieve a smooth and creamy consistency.

Taste and Adjust: Taste the mixture and adjust sweetness if needed. If you prefer it sweeter, add more honey or syrup.

Fill the Molds: Carefully pour the mango lassi mixture into your silicone mold or ice cube tray. Make sure not to overfill; leave a little space at the top to allow for expansion when freezing.

Freeze: Place the molds in the freezer and let them freeze for at least 4 hours, or until completely solid.

Unmold and Serve: Once frozen, remove the lassi bites from the molds. If they are too stubborn, run the mold under warm water for a few seconds to loosen.

Garnish and Enjoy: Optionally, garnish each bite with a fresh mint leaf for added flavor and presentation. Serve immediately and enjoy them as a refreshing dessert or snack!
