Frozen Yogurt Matcha Berry Bites

Combining creamy Greek yogurt, earthy matcha, and sweet mixed berries, these bites offer a refreshing and nutritious snack. Ingredients
  

1 cup Greek yogurt (plain or vanilla)

2 tablespoons matcha powder

2 tablespoons honey or maple syrup (adjust to taste)

1 cup mixed berries (strawberries, blueberries, raspberries, or blackberries)

1 teaspoon vanilla extract

A pinch of sea salt

Optional: chopped nuts or granola for coating

Instructions
 

Prepare the Matcha Yogurt Mixture: In a mixing bowl, combine the Greek yogurt, matcha powder, honey or maple syrup, vanilla extract, and a pinch of sea salt. Whisk the mixture well until smooth and all ingredients are fully incorporated. The vibrant green color from the matcha should be evenly distributed.

    Prepare the Berries: If using larger berries (like strawberries), slice them into smaller, bite-sized pieces. Wash the berries and gently pat them dry.

      Assemble the Bites: Line a mini muffin tin or silicone mold with silicone cupcake liners. Spoon a small amount of the matcha yogurt mixture into each cup, filling it about halfway. Then, add a few pieces of mixed berries on top of the yogurt layer. Use a toothpick or small skewer to gently press the berries into the yogurt if desired.

        Top Off the Bites: Once all cups are filled with yogurt and berries, spoon additional matcha yogurt mixture on top of each berry until the cups are full.

          Freeze: Place the muffin tin or mold in the freezer for at least 4 hours, or until the bites are completely frozen through.

            Release and Enjoy: Once frozen, carefully pop the bites out of the muffin tin or silicone mold. If desired, roll the bites in chopped nuts or granola for added texture before serving.

              Storing: Store any leftovers in an airtight container in the freezer. Let them sit at room temperature for a few minutes before enjoying for the best texture.
