For the Crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

½ teaspoon cinnamon

For the Filling:

2 cups ripe peaches, peeled and diced (about 3 medium peaches)

1 cup plain yogurt (Greek or regular)

½ cup honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 tablespoon lemon juice

Pinch of salt

For the Topping:

½ cup granola (optional)

Fresh peach slices, for garnish

Mint leaves, for garnish (optional)

Instructions
 

Prepare the Crust:

    - Preheat your oven to 350°F (175°C).

      - In a medium bowl, combine graham cracker crumbs, melted butter, granulated sugar, and cinnamon. Mix until it resembles wet sand.

        - Press the mixture evenly into the bottom of a 9x9-inch baking dish. Bake for 10 minutes or until lightly golden. Allow to cool completely.

          Make the Peach Filling:

            - In a blender or food processor, combine the diced peaches, yogurt, honey (or maple syrup), vanilla extract, lemon juice, and a pinch of salt. Blend until smooth and creamy.

              - Taste the mixture and adjust sweetness if needed by adding more honey or maple syrup, then pulse to mix.

                Assemble the Bars:

                  - Pour the peach filling over the cooled crust, spreading it evenly with a spatula.

                    - To create a marbled effect, add a few slices of peach on top and gently swirl them into the filling using a skewer or a knife.

                      Freeze:

                        - Cover the baking dish with plastic wrap or aluminum foil and freeze for at least 4-6 hours, or until fully set.

                          Serve:

                            - Once frozen, remove the bars from the dish by lifting the parchment paper (if used) or gently warming the sides of the dish with warm water.

                              - Cut into squares or bars and top with granola, fresh peach slices, and mint leaves if desired. Serve immediately, or return to the freezer until ready to enjoy.
