Ingredients

1 cup Greek yogurt (plain or vanilla)

1/2 cup natural peanut butter (smooth or crunchy)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1 cup rolled oats

1/2 cup dark chocolate chips

A pinch of salt

Optional toppings: crushed nuts, mini chocolate chips, or shredded coconut

Instructions

Prepare the Yogurt Mixture:

    - In a medium mixing bowl, combine the Greek yogurt, peanut butter, honey (or maple syrup), vanilla extract, and a pinch of salt. Mix thoroughly until the mixture is smooth and creamy.

      Add Oats:

        - Stir in the rolled oats to the yogurt mixture. Ensure the oats are evenly coated with the yogurt mixture for a delightful texture.

          Mold the Cups:

            - Line a muffin tin with silicone or paper liners. Spoon the yogurt and oat mixture into each liner, filling them about 3/4 full. You can use a tablespoon or small cookie scoop for even portions.

              Melt the Chocolate:

                - In a microwave-safe bowl, melt the dark chocolate chips in 20-second intervals, stirring between each interval until smooth. Be careful not to overheat the chocolate.

                  Top with Chocolate:

                    - Drizzle the melted chocolate over each yogurt cup, ensuring an even layer on top. Use a spatula to spread it if desired.

                      Freeze:

                        - Place the muffin tin in the freezer for at least 3-4 hours, or until the yogurt cups are completely frozen.

                          Serve:

                            - Once frozen, remove the cups from the muffin tin and peel off the liners. If desired, sprinkle with optional toppings like crushed nuts, mini chocolate chips, or shredded coconut.

                              Store:

                                - Keep the leftover Frozen Yogurt Peanut Butter Cups in an airtight container in the freezer for up to a month.
