2 cups plain Greek yogurt (or your favorite yogurt)

1/2 cup honey (or maple syrup for a vegan option)

1 teaspoon vanilla extract

1 cup pistachios, shelled and roughly chopped

1/2 cup granola (choose your favorite variety)

1/4 teaspoon sea salt

1/2 cup dark chocolate chips (optional for drizzling)

Fresh mint leaves for garnish (optional)

Prepare the Yogurt Mixture: In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Stir well until the mixture is smooth and creamy.

    Add Crunch: Fold in the chopped pistachios, granola, and sea salt to the yogurt mixture until evenly distributed.

      Form Coins: Line a baking sheet with parchment paper. Using a tablespoon or a cookie scoop, portion out the yogurt mixture and place individual dollops onto the parchment paper, forming coins that are about 2 inches wide.

        Freeze: Place the baking sheet in the freezer for at least 3-4 hours, or until the yogurt coins are solid.

          Chocolate Drizzle (optional): If you'd like to add a chocolate drizzle, melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring after each until fully melted. Once the yogurt coins are frozen, drizzle melted chocolate over the top and return to the freezer for another 30 minutes to set.

            Serve: Remove the frozen yogurt coins from the freezer and let them sit at room temperature for a couple of minutes for easier peeling. Garnish with fresh mint leaves if desired. Enjoy your delightful crunchy treat!
