2 cups plain Greek yogurt

1/2 cup honey or maple syrup

1 cup shelled pistachios, roughly chopped

1 cup Medjool dates, pitted and chopped

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon (optional)

A pinch of sea salt

Extra pistachios for decoration (optional)

Prepare the Base: In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, cinnamon (if using), and a pinch of sea salt. Stir until the mixture is smooth and well combined.

    Incorporate Mix-ins: Gently fold in the chopped pistachios and Medjool dates, ensuring they are evenly distributed throughout the yogurt mixture.

      Form Clusters: Line a baking sheet with parchment paper. Using a spoon or a small ice cream scoop, drop spoonfuls of the yogurt mixture onto the baking sheet, creating clusters that resemble small mounds. Optionally, sprinkle some extra chopped pistachios on top for decoration.

        Freeze: Place the baking sheet in the freezer and let the clusters freeze for at least 3 hours or until they are completely solid.

          Serve: Once frozen, remove the clusters from the baking sheet and transfer them to an airtight container. These can be stored in the freezer for up to 2 weeks. Enjoy them straight from the freezer!
