2 cups fresh strawberries, hulled and sliced

1/4 cup honey or agave syrup (adjust based on sweetness preference)

1 tablespoon lemon zest (from about 1 large lemon)

1/2 cup fresh lemon juice (about 2-3 lemons)

3 cups plain Greek yogurt (or your favorite dairy-free yogurt)

1 teaspoon vanilla extract

1/2 cup granola (for topping)

Fresh mint leaves (for garnish)

Instructions
 

Prepare the Strawberries: In a medium bowl, combine the sliced strawberries and honey. Let them sit for about 10 minutes to macerate, allowing the strawberries to release their juices.

    Make the Lemonade Base: In another bowl, whisk together the lemon juice, lemon zest, Greek yogurt, and vanilla extract until smooth and well combined.

      Blend the Mixture: Using a blender or immersion blender, puree the macerated strawberries until smooth. If you prefer some texture, you can leave small chunks.

        Combine Layers: Take half of the yogurt mixture and spoon it into the bottom of 8 small cups or ramekins. Top this layer with a few spoonfuls of the strawberry puree.

            Freeze: Cover the cups with plastic wrap and place them in the freezer for at least 4-6 hours, or until solid.
