Frozen Yogurt Strawberry Oat Pops

Ingredients
  

2 cups fresh strawberries, hulled and chopped

1 cup Greek yogurt (plain or vanilla)

1/4 cup rolled oats

2 tablespoons honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1 tablespoon lemon juice

A pinch of salt

Optional toppings: granola, chia seeds, or sliced fruit for garnish

Instructions
 

Prepare Strawberries: In a blending container, place the chopped strawberries. Blend until smooth but leave some small chunks for texture, if desired.

    Combine Ingredients: In a large bowl, mix the Greek yogurt, rolled oats, honey (or maple syrup), vanilla extract, lemon juice, and a pinch of salt. Stir well until combined.

      Incorporate Strawberries: Gently fold the blended strawberries into the yogurt mixture, ensuring there are pink swirls in the mixture rather than completely mixed in. This gives a lovely appearance.

        Fill Molds: Pour the mixture into popsicle molds, leaving a little space at the top for expansion. If you’re using optional toppings, sprinkle them inside the molds before adding the yogurt mixture.

          Insert Sticks: Place the popsicle sticks into the molds, ensuring they are centered.

            Freeze: Cover the molds with a lid or plastic wrap and place them in the freezer. Freeze for at least 4-6 hours or until completely solid.

              Unmold and Serve: To release the pops, run warm water over the outside of the molds for a few seconds. Gently pull the pops out and enjoy immediately!

                Store Leftovers: If you have leftovers, place them in a freezer-safe bag or container to keep them for up to two weeks.
