Ingredients

1 cup Greek yogurt (plain or flavored)

2 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 cup unsweetened shredded coconut

1 ripe banana, sliced into 1/2 inch coins

Fresh fruit (e.g., berries, mango, or kiwi) for topping

Dark chocolate drizzle (optional)

Instructions

Prep the Coconut: Preheat your oven to 350°F (175°C). Spread the shredded coconut onto a baking sheet in an even layer. Toast in the oven for about 5-7 minutes or until golden brown, stirring halfway through to ensure even toasting. Watch closely to prevent burning.

Mix the Yogurt Base: In a mixing bowl, combine the Greek yogurt, honey or maple syrup, and vanilla extract. Stir until well blended and smooth. You can adjust sweetness according to your preference.

Assemble the Coins: On a flat surface or parchment-lined baking sheet, arrange the banana slices. Using a spoon or spatula, spread a generous dollop of the yogurt mixture on top of each banana coin.

Add the Coconut: Sprinkle the toasted coconut on top of each yogurt-covered banana slice, pressing lightly to ensure it sticks.

Freeze: Place the assembled banana coins in the freezer for at least 2 hours or until frozen solid.

Serve: Once frozen, remove from the freezer. Optionally, drizzle with melted dark chocolate. Enjoy immediately as a refreshing snack or dessert!
