Prepare Yogurt Mixture: In a medium-sized bowl, combine the Greek yogurt, honey or maple syrup, vanilla extract, and a pinch of salt. Mix well until it’s smooth and creamy.

    Add Coconut: Gently fold in 1/4 cup of the shredded coconut into the yogurt mixture. Reserve the remaining coconut for topping.

      Create Rounds: On a parchment-lined baking sheet, drop spoonfuls (about 2 tablespoons each) of the yogurt mixture. Use the back of a spoon to flatten each scoop into thin rounds, aiming for about 1/2 inch thick.
