Garlic Butter Chickpea Mash

Ingredients
  

2 cans (15 oz each) chickpeas, drained and rinsed

4 tablespoons unsalted butter (or vegan alternative)

6 cloves garlic, minced

1 teaspoon smoked paprika

½ teaspoon cumin

½ teaspoon red pepper flakes (optional for a kick)

½ cup vegetable broth (or chickpea liquid)

Salt and pepper to taste

Juice of 1 lemon

Fresh parsley, chopped, for garnish

Instructions
 

In a large skillet, melt the butter over medium heat.

    Once melted, add the minced garlic to the skillet and sauté for about 2-3 minutes, until fragrant and golden, being careful not to burn the garlic.

      Stir in the smoked paprika, cumin, and red pepper flakes (if using) to combine the flavors, cooking for an additional minute.

        Add the drained chickpeas to the skillet and mix well to coat them in the garlic butter mixture.

          Pour in the vegetable broth (or chickpea liquid) to help soften the chickpeas, and cook for about 5-7 minutes until warmed through and slightly softened.

            Remove the skillet from heat and use a potato masher or fork to mash the chickpeas to your desired consistency. You can leave it chunky for a more rustic version or blend until smooth.

              Stir in the lemon juice, then season with salt and pepper to taste. Customize the seasoning to your preference!

                Transfer the chickpea mash to a serving bowl and garnish with freshly chopped parsley. Enjoy warm on toast, as a dip, or alongside your favorite dishes!
