1 pound (450g) fresh mushrooms (such as cremini or button)

4 tablespoons unsalted butter

4 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)

1 teaspoon fresh parsley, chopped (for garnish)

Salt and pepper, to taste

Juice of 1/2 lemon

Optional: 1/4 teaspoon red pepper flakes (for a spicy kick)

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Mushrooms: Clean the mushrooms with a damp cloth to remove any dirt. Trim the stems if necessary and leave the mushrooms whole or halve them if they are larger.

      Make Garlic Butter: In a small saucepan, melt the butter over medium heat. Once melted, add the minced garlic, thyme, and red pepper flakes (if using). Cook for about 1-2 minutes until the garlic is fragrant, but be careful not to let it brown.

        Combine and Season: In a large mixing bowl, toss the cleaned mushrooms with olive oil, the garlic butter mixture (reserve some for drizzling later), salt, and pepper until evenly coated.

          Roast the Mushrooms: Spread the mushrooms in a single layer on the prepared baking sheet. Roast in the preheated oven for about 20-25 minutes, or until they are golden brown and tender, tossing halfway through for even cooking.

            Finish with Flavor: Once out of the oven, drizzle the lemon juice over the roasted mushrooms and toss gently. Adjust seasoning with additional salt and pepper if needed.
