1 pound (450g) large shrimp, peeled and deveined

1 cup quinoa, rinsed and drained

2 cups vegetable broth or water

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh lemon juice

1 teaspoon lemon zest

1 teaspoon paprika

1/2 teaspoon red pepper flakes (adjust for spice preference)

Salt and pepper, to taste

2 tablespoons fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and vegetable broth (or water). Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and the liquid has been absorbed. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork and set aside.

    Prepare the Shrimp: While the quinoa is cooking, pat the shrimp dry with paper towels. Season with salt, pepper, paprika, and red pepper flakes.

      Sauté the Shrimp: In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add the minced garlic and sauté for about 30 seconds, or until fragrant. Add the seasoned shrimp and cook for 2-3 minutes on each side, or until they turn pink and opaque. Be careful not to overcook the shrimp.
