Garlic Herb Roasted Mushrooms

1 lb (450g) fresh mushrooms (button, cremini, or a mix)

4 cloves garlic, minced

3 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon fresh thyme leaves (or 1/4 teaspoon dried thyme)

1 teaspoon fresh rosemary, chopped (or 1/4 teaspoon dried rosemary)

1/2 teaspoon sea salt

1/2 teaspoon black pepper

Fresh parsley, chopped (for garnish)

Optional: Red pepper flakes for a spicy kick

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Mushrooms: Clean the mushrooms gently with a damp cloth or paper towel. Remove any tough stems and slice them in halves or quarters, depending on their size.

      Make the Marinade: In a large mixing bowl, combine the minced garlic, olive oil, balsamic vinegar, thyme, rosemary, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

        Toss the Mushrooms: Add the cleaned and sliced mushrooms to the bowl and toss them in the marinade until they're evenly coated. If you enjoy a little heat, sprinkle in some red pepper flakes now.

          Arrange on a Baking Sheet: Spread the marinated mushrooms out in a single layer on a baking sheet lined with parchment paper to prevent sticking.

            Roast the Mushrooms: Place the baking sheet in the preheated oven and roast for 20-25 minutes, or until the mushrooms are golden brown and tender, tossing halfway through for even cooking.

              Add Garnish: Once done, remove from the oven and let them cool for a couple of minutes. Transfer to a serving dish and garnish with freshly chopped parsley.
