2 large yellow onions

1 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon garlic powder

1 teaspoon paprika

½ teaspoon salt

¼ teaspoon black pepper

1 cup buttermilk (or milk with 1 tablespoon vinegar added)

1 large egg

1 cup breadcrumbs (preferably panko for extra crunch)

Oil for frying (canola or vegetable oil)

Optional: dipping sauce (such as ranch or spicy mayonnaise)

Prepare the Onions: Peel the onions and slice them into ½-inch thick rings. Carefully separate the rings from one another and set aside.

    Make the Batter: In a medium bowl, whisk together the flour, baking powder, garlic powder, paprika, salt, and black pepper until well combined.

      Combine Wet Ingredients: In another bowl, whisk together the buttermilk and egg until smooth.

        Breading Process:

          - Dip each onion ring first in the flour mixture to coat lightly.

            - Next, dip it into the buttermilk mixture, allowing the excess to drip off.

              - Finally, coat the onion ring in breadcrumbs, pressing gently to ensure even coverage. Repeat with the remaining rings.
